 Meat is firm, white and sweet. Consists of numerous smalll, intramuscular bones running the full length of the body. Meat should be scored to soften these bones. Should be cooked with the skin on, otherwise the flakes will fall apart. Roes and milts are delicacies; are rolled in cornmeal and fried, or lightly cooked then mixed with eggs and scrambled. Contains 117 kcal in 100 g edible weight.
